Pol Sambol (coconut sambol)

Ingredients

100 gm scraped coconut

1 large onion chopped

1/4 tsp chilli powder

1 tsp crushed chilli flakes

1 tsp sweet paprika powder

1 clove garlic thinly chopped

3 tsp lime juice

salt to taste

Method

1. Put scraped coconut into a large bowl.

2. Add all ingredients except salt and lime juice.

3. Mix well with a wooden spoon.

4. Add lime juice and salt to taste.

Fried Karavila Sambol (Bitter Gourd)

Ingredients

3-4  Large fresh karavila (bitter gourd)
2     Medium size red onions finely sliced
1/4 bottle of vegetable oil
2-3 Green chillies sliced
2   Wine tomatoes thinly sliced
1 tbsp Lime Juice
Salt to taste

Method

1.Wash karavilla and slice thinly .

2.Heat oil in a wok and deep fry karavila until golden brown.  Once done put them on a paper towel to absorb the excess oil.

3.Mix  sliced onions, tomatoes, green chilles in a bowl and add deep fried karavila.  Lastly add lemon juice and salt to taste and mix well.

Ingredients

150g of red onions
5 tablespoons of Maldive fish.
10 Crushed Cardamoms
7 Cloves
4inch Stick of Cinnamon
10 Chopped Garlic Cloves
2 tablespoons of broken dried red chillies
2 Curry Leaves
5inches of Lemon Grass
1/2 cup Tamarind Paste
1 tablespoon sugar
2 cups of Oil
1 Tablespoon Ground Dried Prawns
1/2cup thick coconut milk

Method

1. Heat oil in a pan
2. Clean and slice onions thinly. Deep  fry until light brown & drain off excess oil.
3. Mix well with all dry ingredients.
4.Finally mix tamarind paste  with  onions. Add some thick coconut cream to the mixture to bind the onions together.
